I love Flying, and Flight Simulators: so, I spent months working on Boeing blueprints (and real pictures)  to get a more realistic cockpit's model: made with Blender and Photoshop, and some other little graphics tools...
The model is available as one of the default aircraft in Flightgear, the Open Source Filght Simulator.
